Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 cup desiccated coconut
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup apricot jam
  • 1 tablespoon milk (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened butter and powdered sugar until creamy.
  3. Add the flour, baking powder, salt, and desiccated coconut, and mix until a dough forms.
  4. Press the dough into a greased muffin tin, using your thumbs to create a small well in the center of each cup.
  5. Fill each well with a teaspoon of apricot jam.
  6. Bake for 15-20 minutes or until lightly golden.
  7. Allow to cool before removing from the tin.
