This homemade barbacoa recipe features tender, flavorful beef that makes the perfect filling for tacos.

- 3 pounds beef chuck roast
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 onion, chopped
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1 teaspoon chipotle pepper, diced
- 1 cup beef broth
Instructions
- Season the beef chuck roast with salt and black pepper.
- In a large skillet, heat olive oil over medium-high heat and sear the beef on all sides.
- Remove the beef and add garlic, onion, cumin, oregano, and chipotle pepper to the skillet. Sauté until fragrant.
- Place the beef back in the pot, add beef broth, and cover. Simmer on low for 4-6 hours until tender.
- Shred the beef and mix it with the juices in the pot before serving.
Notes
- For a spicier kick, add more chipotle peppers.
- This barbacoa can also be prepared in a slow cooker.
