Description

This herb roasted chicken and crispy potatoes plate is perfect for easy home cooking, combining flavorful herbs with juicy chicken and golden potatoes.


Ingredients

  • 4 bone-in chicken thighs
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1.5 pounds baby potatoes
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper.
  3. Rub the mixture onto the chicken thighs.
  4. Place the potatoes in a baking dish and season with paprika, salt, and pepper.
  5. Arrange the chicken on top of the potatoes.
  6. Bake for 45–50 minutes or until the chicken is cooked through and potatoes are golden.
  7. Garnish with fresh parsley before serving.
