- 4 bone-in chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1.5 pounds baby potatoes
- 1 teaspoon paprika
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, mix olive oil, rosemary, thyme, garlic, salt, and pepper.
- Rub the mixture onto the chicken thighs.
- Place the potatoes in a baking dish and season with paprika, salt, and pepper.
- Arrange the chicken on top of the potatoes.
- Bake for 45–50 minutes or until the chicken is cooked through and potatoes are golden.
- Garnish with fresh parsley before serving.
