A delightful dessert combining the rich flavors of cherry and pistachio in a creamy cheesecake bar.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup cherry pie filling
- 1/2 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased baking dish.
- In another bowl, beat together cream cheese and sugar until smooth. Add eggs and vanilla, mixing until well combined.
- Pour the cream cheese mixture over the crust in the baking dish.
- Drop spoonfuls of cherry pie filling on top and swirl with a knife.
- Sprinkle chopped pistachios over the top.
- Bake for 30-35 minutes or until set. Allow to cool before cutting into bars.
Notes
- For a richer flavor, use a mixture of cream cheese and mascarpone.
- Chill the bars in the refrigerator for several hours before serving for best results.
