- 2 cups potatoes, cubed

- 3 cloves garlic, minced

- 1 teaspoon dried rosemary
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
- Add the chicken thighs and cook until browned on all sides.
- Pour in the chicken broth and bring to a boil.
- Add the carrots, potatoes, thyme, rosemary, salt, and pepper.
