Ingredients

  • 1 teaspoon ground cinnamon

  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs and mix in the oil, grated carrots, crushed pineapple, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the coconut if using.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
