Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the ricotta cheese, egg, and almond extract, and mix until well combined.
- In a separate bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
- Gradually stir the dry ingredients into the wet mixture until just combined.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the edges are lightly golden.
- Remove from the oven and let cool; dust with powdered sugar before serving.
