- 2 pounds beef roast
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 cup balsamic vinegar
- 1 cup beef broth
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together garlic, rosemary, salt, and pepper.
- Rub the mixture all over the beef roast.
- In a large skillet, heat olive oil over medium-high heat and sear the beef on all sides.
- Transfer the roast to a baking dish and pour balsamic vinegar and beef broth over it.
- Cover with foil and bake for about 2 hours, or until the beef is tender.
- Remove from the oven and let the beef rest before slicing.
- Serve with the balsamic gravy spooned over the top.

- For best flavor, marinate the beef roast overnight with the garlic and rosemary.
