Description

Frijoles Borrachos, or Drunken Beans, are a delicious and comforting dish that combines the rich flavors of turkey bacon with beans in a hearty recipe perfect for any occasion.


Ingredients

  • 2 cups pinto beans
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 tablespoon lime juice
  • Salt and pepper to taste


Instructions

  1. Rinse and soak the pinto beans in water overnight.
  2. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  3. Add the chopped onion and garlic to the pot, sautéing until softened.
  4. Stir in the cumin and chili powder, and cook for another minute.
  5. Add the soaked beans and chicken broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for about 2 hours or until beans are tender.
  7. Stir in the lime juice, chopped turkey bacon, and season with salt and pepper.
  8. Serve hot and enjoy!
