- 2 cups pinto beans
- 4 slices turkey bacon
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Rinse and soak the pinto beans in water overnight.
- In a large pot, cook the turkey bacon until crispy, then remove and chop.
- Add the chopped onion and garlic to the pot, sautéing until softened.
- Stir in the cumin and chili powder, and cook for another minute.
- Add the soaked beans and chicken broth to the pot.
- Bring to a boil, then reduce heat and simmer for about 2 hours or until beans are tender.
- Stir in the lime juice, chopped turkey bacon, and season with salt and pepper.
- Serve hot and enjoy!
