- 4 ears fresh corn, husked
- 4 strips turkey bacon
- 1 cup diced chicken ham
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Salt to taste
- Pepper to taste
Instructions
- Start by cooking the turkey bacon in a skillet until crispy. Remove and crumble.
- In the same skillet, cook the corn for a few minutes until slightly charred.
- In a large bowl, combine the corn, crumbled bacon, chicken ham, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
