- 2 pounds beef short ribs
- 2 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 cup dry white wine
- 2 tablespoons Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 slices baguette
- 2 cups grated Gruyère cheese
Instructions
- In a large pot, brown the short ribs on all sides.
- Remove short ribs and sauté onions until caramelized, about 15 minutes.
- Add garlic and cook for another minute.
- Deglaze the pot with white wine, scraping up the browned bits.
- Return the short ribs to the pot and add beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a simmer and cover, cooking for 2-3 hours until meat is tender.
- Preheat the oven to broil.
- Toast baguette slices until golden, then top with Gruyère cheese and broil until bubbly.
- Serve the soup hot with cheesy toast on the side.
Notes
- For extra flavor, use homemade beef broth.
- Allow the soup to sit overnight for the flavors to develop even more.
