Description

A savory and rich soup combining tender short ribs and caramelized onions, topped with gooey Gruyère cheese on toasted bread.


Ingredients

Scale
  • 2 pounds beef short ribs
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 slices baguette
  • 2 cups grated Gruyère cheese


Instructions

  1. In a large pot, brown the short ribs on all sides.
  2. Remove short ribs and sauté onions until caramelized, about 15 minutes.
  3. Add garlic and cook for another minute.
  4. Deglaze the pot with white wine, scraping up the browned bits.
  5. Return the short ribs to the pot and add beef broth, Worcestershire sauce, thyme, salt, and pepper.
  6. Bring to a simmer and cover, cooking for 2-3 hours until meat is tender.
  7. Preheat the oven to broil.
  8. Toast baguette slices until golden, then top with Gruyère cheese and broil until bubbly.
  9. Serve the soup hot with cheesy toast on the side.

  • For extra flavor, use homemade beef broth.
  • Allow the soup to sit overnight for the flavors to develop even more.
