- 4 boneless, skinless chicken thighs
- 1 cup BBQ sauce
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 red onion, sliced

- salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine BBQ sauce, pineapple chunks, bell pepper, onion, garlic, ginger, olive oil, salt, and pepper.
- Add chicken thighs to the bowl and coat them well with the mixture.
- Place the chicken and vegetable mixture in the center of large pieces of foil.
- Fold the foil to create sealed packets.
- Grill the packets for 25-30 minutes or until chicken is cooked through.
- Remove from grill, carefully open the packets, and serve hot.
