Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup BBQ sauce
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon olive oil
  • salt and pepper to taste


Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine BBQ sauce, pineapple chunks, bell pepper, onion, garlic, ginger, olive oil, salt, and pepper.
  3. Add chicken thighs to the bowl and coat them well with the mixture.

  5. Fold the foil to create sealed packets.
  6. Grill the packets for 25-30 minutes or until chicken is cooked through.
