Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell pepper, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (your choice)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs and cottage cheese until well combined.
  3. Add the chopped spinach, bell pepper, garlic powder, onion powder, salt, and black pepper. Mix well.
  4. Grease a muffin tin or line it with muffin liners.
  5. Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Sprinkle shredded cheese on top of each muffin.
  7. Bake for 20-25 minutes or until the muffins are set and lightly golden on top.
