- 3 large oranges
- 1 cup pistachios, shelled
- 1 cup sugar
- 6 large eggs

Instructions
- Preheat your oven to 350°F (175°C) and grease a round cake pan.
- Boil the oranges in water for about 2 hours until they are soft. Drain and let cool.
- In a food processor, puree the cooled oranges until smooth.
- Add the pistachios, sugar, eggs, baking powder, and salt, and blend until well combined.
- Pour the batter into the prepared cake pan.
- Bake for about 45-50 minutes, or until a toothpick inserted comes out clean.
- Let cool before removing from the pan.
