- 1 pound chicken breasts, diced
- 8 ounces turkey bacon, chopped
- 1 cup bell peppers, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 cup salsa
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, heat the olive oil and cook the turkey bacon until crispy.
- Add the diced chicken and cook until browned.
- Stir in the bell peppers, black beans, corn, salsa, cumin, and chili powder. Mix well.
- Transfer the mixture to a baking dish and top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
Notes
- For a spicier dish, add jalapeños or extra chili powder.
- This casserole can be made ahead and refrigerated before baking.
