- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 1/4 cup brown sugar
- 1 can sliced pineapple, drained
- 1/2 cup maraschino cherries
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, melt the butter and brown sugar over medium heat. Mix until smooth.
- Pour the butter mixture into the bottom of a round cake pan.
- Arrange the pineapple slices and cherries over the butter mixture.
- In a bowl, mix flour, sugar, baking powder, and salt.
- In another bowl, combine eggs, milk, and vanilla. Mix well.
- Combine wet and dry ingredients until just mixed.
- Pour the batter over the pineapple and cherries.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes, then invert onto a plate.
Notes
- For a more tropical flavor, add shredded coconut to the batter.
- Serve with whipped cream or vanilla ice cream.
