This Easy Pineapple Upside Down Cake offers a tropical twist that will delight your taste buds.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/4 cup brown sugar
  • 1 can sliced pineapple, drained
  • 1/2 cup maraschino cherries
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the butter and brown sugar over medium heat. Mix until smooth.
  3. Pour the butter mixture into the bottom of a round cake pan.
  4. Arrange the pineapple slices and cherries over the butter mixture.
  5. In a bowl, mix flour, sugar, baking powder, and salt.
  6. In another bowl, combine eggs, milk, and vanilla. Mix well.
  7. Combine wet and dry ingredients until just mixed.
  8. Pour the batter over the pineapple and cherries.
  9. Bake for 30-35 minutes or until a toothpick comes out clean.
  10. Let cool for 10 minutes, then invert onto a plate.

Notes

  • For a more tropical flavor, add shredded coconut to the batter.
  • Serve with whipped cream or vanilla ice cream.
