- 2 large zucchinis, sliced
- 1 pound beef sausage
- 1 cup shredded mozzarella cheese
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
- Add beef sausage to the skillet, cooking until browned.
- Add sliced zucchinis, Italian seasoning, salt, and pepper. Cook for about 5 minutes until zucchinis are slightly tender.
- Transfer the mixture to a baking dish and top with mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
Notes
- For added flavor, try using spicy sausage.
- Feel free to add other vegetables like bell peppers or mushrooms.
