Description

A delicious and easy low carb casserole featuring zucchini and beef sausage, perfect for a healthy dinner.


Ingredients

  • 2 large zucchinis, sliced
  • 1 pound beef sausage
  • 1 cup shredded mozzarella cheese
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté onion and garlic until translucent.
  3. Add beef sausage to the skillet, cooking until browned.
  4. Add sliced zucchinis, Italian seasoning, salt, and pepper. Cook for about 5 minutes until zucchinis are slightly tender.
  5. Transfer the mixture to a baking dish and top with mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
