Description

A delicious and easy recipe for a low carb chicken casserole featuring turkey bacon.


Ingredients

  • 1 pound chicken breasts, cooked and shredded
  • 8 slices turkey bacon, cooked and crumbled
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, crumbled turkey bacon, broccoli, cauliflower, and half of the cheese.
  3. In another bowl, whisk together the heavy cream, eggs, garlic powder, onion powder, paprika, salt, and pepper.
  4. Pour the cream mixture over the chicken and vegetables, and stir to combine.
  5. Transfer the mixture to a greased casserole dish and top with remaining cheese.
  6. Bake for 30-35 minutes or until the casserole is bubbly and golden brown.
  7. Let it cool for a few minutes before serving.

Notes

  • For a spicy kick, add red pepper flakes.
  • Feel free to substitute vegetables as desired.
