- 8 ounces elbow macaroni
- 4 large eggs
- 4 strips turkey bacon
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 teaspoon paprika
- Salt to taste

- 1/4 cup green onions, chopped
- 1/4 cup pickles, diced
Instructions
- Cook the elbow macaroni according to package instructions; drain and set aside.
- Hard boil the eggs, peel, and chop them.
- Cook turkey bacon until crispy, then crumble.
- In a large bowl, combine the macaroni, eggs, turkey bacon, mayonnaise, Dijon mustard, paprika, salt, and pepper.
- Add the green onions and pickles, mixing until all ingredients are well combined.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to swap in regular bacon for a different flavor.
