Description
A fresh, tangy, and simple cucumber tomato salad made with ripe tomatoes, crisp cucumbers, and a zesty olive oil dressing.
Ingredients

- 2 large cucumbers, sliced or diced
- 3–4 ripe tomatoes, chopped
- 1 garlic clove, minced
- 1/4 cup red onion, thinly sliced (optional)
- 2 tbsp fresh parsley or basil, chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar or lemon juice
- Salt and pepper, to taste
Instructions
- Slice cucumbers and chop tomatoes into bite-sized pieces.
- If using, slice the red onion thinly. Chop herbs.
- In a small bowl, whisk olive oil, vinegar/lemon juice, garlic, salt, and pepper.
- Combine vegetables and herbs in a large bowl.
- Pour dressing over the top and toss gently to coat.
- Let rest for 15–30 minutes before serving. Serve chilled or room temperature.
Notes
- Add feta or olives for a Mediterranean flavor.
- Soak onions in cold water to reduce sharpness.
- Seed tomatoes to prevent sogginess.
