Description

A fresh, tangy, and simple cucumber tomato salad made with ripe tomatoes, crisp cucumbers, and a zesty olive oil dressing.


Ingredients

  • 2 large cucumbers, sliced or diced
  • 34 ripe tomatoes, chopped
  • 1 garlic clove, minced
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tbsp fresh parsley or basil, chopped
  • 3 tbsp olive oil
  • 2 tbsp red wine vinegar or lemon juice
  • Salt and pepper, to taste

Instructions

  1. Slice cucumbers and chop tomatoes into bite-sized pieces.
  2. If using, slice the red onion thinly. Chop herbs.
  3. In a small bowl, whisk olive oil, vinegar/lemon juice, garlic, salt, and pepper.
  4. Combine vegetables and herbs in a large bowl.
  5. Pour dressing over the top and toss gently to coat.
  6. Let rest for 15–30 minutes before serving. Serve chilled or room temperature.

  • Add feta or olives for a Mediterranean flavor.
  • Soak onions in cold water to reduce sharpness.
