- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning

- 1 cup chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 8 ounces orzo pasta
- 1/4 cup sun-dried tomatoes, chopped

Instructions
- In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined. Form into meatballs.
- In a large skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides.
- Pour in the chicken broth and bring to a simmer. Cook for 10 minutes, adding the orzo pasta halfway through.
- Lower the heat, add heavy cream and mix them well. Stir in the fresh spinach and sun-dried tomatoes. Cook until the spinach is wilted and the sauce is creamy.

- For a lighter version, you can use ground turkey instead of chicken.
