Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 8 ounces orzo pasta
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tablespoon olive oil


Instructions

  1. In a large bowl, mix ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper until well combined. Form into meatballs.
  2. In a large skillet, heat olive oil over medium heat. Add the meatballs and cook until browned on all sides.
  3. Pour in the chicken broth and bring to a simmer. Cook for 10 minutes, adding the orzo pasta halfway through.
  4. Lower the heat, add heavy cream and mix them well. Stir in the fresh spinach and sun-dried tomatoes. Cook until the spinach is wilted and the sauce is creamy.
