This creamy tomato soup with turkey bacon is the perfect dish to enjoy during spring and summer. It’s rich, flavorful, and easy to prepare!

- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups canned crushed tomatoes
- 1 cup chicken broth
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 4 slices turkey bacon, cooked and crumbled
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and cook for an additional minute.
- Stir in crushed tomatoes, chicken broth, basil, salt, and black pepper. Bring to a simmer.
- Reduce heat and let simmer for 20 minutes.
- Remove from heat and blend the soup until smooth.
- Return the soup to the pot, stir in heavy cream, and reheat gently.
- Serve topped with crumbled turkey bacon.
Notes
- For a vegetarian version, omit the turkey bacon.
- Feel free to add fresh basil for garnish.
