Description

This creamy tomato soup with turkey bacon is the perfect dish to enjoy during spring and summer. It’s rich, flavorful, and easy to prepare!


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups canned crushed tomatoes
  • 1 cup chicken broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 4 slices turkey bacon, cooked and crumbled


Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in crushed tomatoes, chicken broth, basil, salt, and black pepper. Bring to a simmer.
  4. Reduce heat and let simmer for 20 minutes.
  5. Remove from heat and blend the soup until smooth.
  6. Return the soup to the pot, stir in heavy cream, and reheat gently.
  7. Serve topped with crumbled turkey bacon.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Feel free to add fresh basil for garnish.
