- 2 cups fresh spinach
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
- In a skillet, heat olive oil over medium heat and add minced garlic. Sauté until fragrant.
- Add fresh spinach and smoked paprika, stirring until spinach is wilted.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and creamy.
- Add the cooked gnocchi to the skillet, gently tossing to coat. Season with salt and pepper to taste.
- Serve immediately, garnished with additional Parmesan if desired.

- For a vegetarian version, ensure the cheese is rennet-free.
