- 2 tablespoons olive oil
- 4 slices turkey bacon, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound salmon fillet, skin removed
- 4 cups fresh spinach
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
Instructions
- Cook the orzo according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Add onion and garlic to the skillet and sauté until softened.
- Add salmon fillet to the skillet, cooking until opaque and flakes easily with a fork.
- Stir in spinach, heavy cream, salt, and pepper. Cook until spinach is wilted.
- Mix in the cooked orzo and Parmesan cheese. Stir until well combined.
- Serve immediately.

- For a lighter version, use half-and-half instead of heavy cream.
