Description

Ingredients

  • 8 ounces orzo
  • 2 tablespoons olive oil
  • 4 slices turkey bacon, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound salmon fillet, skin removed
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Cook the orzo according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  3. Add onion and garlic to the skillet and sauté until softened.
  4. Add salmon fillet to the skillet, cooking until opaque and flakes easily with a fork.
  5. Stir in spinach, heavy cream, salt, and pepper. Cook until spinach is wilted.
  6. Mix in the cooked orzo and Parmesan cheese. Stir until well combined.
  7. Serve immediately.
