Ingredients

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, cubed
  • 1 cup mushrooms, sliced
  • 1 cup asparagus, cut into 1-inch pieces
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
  3. Add the mushrooms and asparagus to the skillet; cook for another 4-5 minutes until tender.
  4. Stir in the garlic and cook for 1 minute.
  5. Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and creamy.
  6. Toss the cooked penne pasta into the sauce, coating well. Season with salt and pepper.
  7. Serve warm, garnished with fresh parsley.
