- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1 pound chicken breast, cubed
- 1 cup mushrooms, sliced
- 1 cup asparagus, cut into 1-inch pieces
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the penne pasta according to package instructions; drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chicken and cook until browned, about 5-7 minutes.
- Add the mushrooms and asparagus to the skillet; cook for another 4-5 minutes until tender.
- Stir in the garlic and cook for 1 minute.
- Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and creamy.
- Toss the cooked penne pasta into the sauce, coating well. Season with salt and pepper.
- Serve warm, garnished with fresh parsley.
