Description

Ingredients

  • 8 ounces pasta of choice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • salt to taste
  • black pepper to taste


Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add the spinach and sun-dried tomatoes, cooking until the spinach wilts.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the Parmesan cheese, salt, and pepper until well combined.
  6. Toss in the cooked pasta and mix until coated in the sauce.
  7. Serve hot, garnished with additional Parmesan if desired.
