Description

A delightful dish featuring zucchini rolls stuffed with creamy burrata and topped with a savory tomato glaze.


Ingredients

  • 4 medium zucchini
  • 1 cup burrata cheese
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini lengthwise and scoop out the middle to form rolls.
  3. In a bowl, mix burrata cheese, chopped basil, salt, and pepper.
  4. Fill each zucchini slice with the cheese mixture and roll them up.
  5. Place the rolls in a baking dish.
  6. In a skillet, heat olive oil and sauté garlic until fragrant.
  7. Add cherry tomatoes and cook until softened, then pour over zucchini rolls.
  8. Bake for 20-25 minutes until the zucchini is tender.
