- 4 medium zucchini
- 1 cup burrata cheese
- 1 cup cherry tomatoes
- 2 tablespoons olive oil

- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchini lengthwise and scoop out the middle to form rolls.
- In a bowl, mix burrata cheese, chopped basil, salt, and pepper.
- Fill each zucchini slice with the cheese mixture and roll them up.
- Place the rolls in a baking dish.
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Add cherry tomatoes and cook until softened, then pour over zucchini rolls.
- Bake for 20-25 minutes until the zucchini is tender.
Notes
