- 1 cup packed light brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 1 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- 3 cups old-fashioned rolled oats
- 1 cup dried cranberries
- 1 cup chopped walnuts
- Optional: ½ cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter and both sugars until light and fluffy.
- Add eggs one at a time, beating well, then stir in vanilla.
- In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Add to wet ingredients until just combined.
- Fold in oats, cranberries, walnuts, and white chocolate chips if using.
- Scoop dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes until edges are golden and centers are soft.
- Cool on baking sheet for 5 minutes, then transfer to wire rack.
Notes
- Underdone cookies are chewier—let them finish setting on the pan.
- Walnuts can be replaced with pecans or pumpkin seeds for a nut-free version.
- Add orange zest for a bright, festive twist.
