- ½ teaspoon fine sea salt
- 1 cup unsalted butter, softened
- ¾ cup packed light brown sugar
- ½ cup granulated sugar
- 2 large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup sweetened shredded coconut
- 1 cup toffee bits (Heath or Skor)
- 1½ cups semisweet chocolate chips
- Flaky sea salt for topping (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, then mix in vanilla.
- Whisk together flour, baking soda, and salt in a separate bowl.
- Gradually add dry ingredients to the butter mixture and mix until just combined.
- Fold in coconut, toffee bits, and chocolate chips with a spatula.
- Spread dough evenly in the prepared pan and sprinkle with flaky sea salt if desired.
- Bake for 18–20 minutes or until the edges are golden and the center is just set.
- Let cool completely in the pan before lifting out and slicing into bars.
Notes
- Toast the coconut before adding for a richer flavor.
- Use dark or white chocolate chips to switch up the flavor.
- These bars freeze well—wrap individually for easy storage.
