- 2 pounds beef chuck, cut into 1-inch pieces
- 6 ounces turkey bacon, diced
- 1 tablespoon olive oil
- 2 cups carrots, sliced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large Dutch oven, cook the turkey bacon over medium heat until crisp. Remove and set aside.
- In the same pot, add the olive oil and beef, browning on all sides.
- Add carrots, onion, and garlic to the pot and sauté until the vegetables are tender.
- Pour in the red wine and beef broth, stirring to combine.
- Stir in the tomato paste, thyme, bay leaf, and the cooked turkey bacon.
- Bring to a simmer, cover, and cook on low heat for 2 to 3 hours or until the beef is tender.
- Season with salt and pepper before serving.
Notes
- For enhanced flavor, marinate the beef in wine overnight.
- Serve with crusty bread for a complete meal.
