Description

A comforting and delicious take on the classic French dish, combining tender beef with the smoky flavor of turkey bacon.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 6 ounces turkey bacon, diced
  • 1 tablespoon olive oil
  • 2 cups carrots, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. In a large Dutch oven, cook the turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same pot, add the olive oil and beef, browning on all sides.
  3. Add carrots, onion, and garlic to the pot and sauté until the vegetables are tender.
  4. Pour in the red wine and beef broth, stirring to combine.
  5. Stir in the tomato paste, thyme, bay leaf, and the cooked turkey bacon.
  6. Bring to a simmer, cover, and cook on low heat for 2 to 3 hours or until the beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • For enhanced flavor, marinate the beef in wine overnight.
