- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese
- 1/2 cup unsalted butter
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1/4 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Flatten the chicken breasts to an even thickness.
- Prepare a breading station with flour, beaten eggs, and a mixture of flour and Parmesan cheese.
- Dredge each chicken breast in flour, then dip in eggs, and finally coat with the flour and Parmesan mixture.
- In a large skillet, melt butter over medium heat and cook the chicken until golden brown on both sides.
- Remove chicken and set aside. In the same skillet, add garlic and sauté for a minute.
- Add lemon juice and chicken broth, scraping up any browned bits from the skillet.
- Return the chicken to the skillet and simmer for a few minutes until cooked through.
- Garnish with fresh parsley before serving.
