Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup unsalted butter
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste


Instructions

  1. Flatten the chicken breasts to an even thickness.
  2. Prepare a breading station with flour, beaten eggs, and a mixture of flour and Parmesan cheese.
  3. Dredge each chicken breast in flour, then dip in eggs, and finally coat with the flour and Parmesan mixture.
  4. In a large skillet, melt butter over medium heat and cook the chicken until golden brown on both sides.
  5. Remove chicken and set aside. In the same skillet, add garlic and sauté for a minute.
  6. Add lemon juice and chicken broth, scraping up any browned bits from the skillet.
