Ingredients

  • 3 cups cooked and shredded chicken
  • 2 cups bell peppers, sliced
  • 1 cup onion, sliced
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 9 lasagna noodles
  • 1 cup salsa


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté onions and bell peppers until soft.
  3. Add shredded chicken, diced tomatoes, taco seasoning, and salsa; mix well.
  4. In a baking dish, layer 3 lasagna noodles, then half the chicken mixture, and half the cheese.
  5. Repeat the layers, finishing with noodles and the remaining cheese on top.
  6. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes or until cheese is bubbly.
