Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup chopped pistachios
  • 1 cup cherry pie filling


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat together cream cheese and sugar until smooth. Add in the vanilla extract.
  4. Add the eggs one at a time, mixing well after each addition. Finally, fold in the sour cream and chopped pistachios.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Bake in the preheated oven for 50-60 minutes until the center is set. Remove from the oven and cool to room temperature.
  7. Once cooled, top with cherry pie filling before serving.

Notes

  • For a firmer cheesecake, refrigerate overnight before serving.
  • You can replace cherry pie filling with fresh cherries for a more natural taste.
