- 1/2 tsp salt
- 1/4 cup grated Parmesan or mild cheese
- 1/4 cup flour (whole wheat or all-purpose)
- 1 large egg
- 1/2 tsp garlic powder (optional)
- Olive oil, for cooking
Instructions
- Grate zucchini and sprinkle with salt. Let sit for 10 minutes.
- Squeeze out excess moisture using a clean towel.
- In a bowl, mix zucchini, cheese, flour, egg, salt, and garlic powder.
- Heat olive oil in a skillet over medium heat.
- Scoop batter into the pan and flatten slightly. Cook for 2–3 minutes per side until golden.
- Transfer to a paper towel to drain. Let cool before serving.

- Use almond or oat flour for a gluten-free version.
- Add chopped herbs for extra flavor.
