- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup chopped walnuts (optional)
- 1 cup caramel sauce
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the grated carrots, granulated sugar, brown sugar, and vegetable oil.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, sift together the flour, baking soda, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the vanilla extract and walnuts if using.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
- Once cooled, layer the cakes with caramel sauce in between and on top.
Notes
- For added flavor, consider adding a pinch of nutmeg to the batter.
