- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 3 tablespoons unsalted butter, chilled and cubed
- 1 large egg yolk
- 1/4 cup white wine or vinegar
- 1 cup ricotta cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/2 cup mini chocolate chips
Instructions
- In a large bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs.
- Stir in egg yolk and wine or vinegar until the dough comes together. Wrap in plastic wrap and refrigerate for 1 hour.
- Roll dough on a floured surface to 1/8 inch thickness. Cut into circles about 4 inches in diameter.
- Wrap circles around cannoli forms and seal the edges with a bit of water.
- Fry in hot oil until golden brown. Drain on paper towels.
- In a bowl, combine ricotta, powdered sugar, vanilla, and cinnamon until smooth. Fold in chocolate chips.
- Fill cooled cannoli shells with ricotta mixture using a piping bag.
- Dust with powdered sugar before serving.
Notes
- For extra crunch, use an egg wash on the edges of the dough before sealing.
- Try adding different toppings inside the cannoli, such as pistachios or fruit.
