A delicious and easy recipe for Cajun shrimp pot pie that’s perfect for a comforting meal any day of the week.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 1 cup diced celery
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 package refrigerated pie crusts
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat, add onion, bell pepper, and celery, and sauté until soft.
  3. Add garlic and cook for another minute.
  4. Stir in shrimp and Cajun seasoning, cooking until shrimp is pink.
  5. Sprinkle flour over the mixture and stir to combine.
  6. Gradually add chicken broth and heavy cream, stirring constantly until thickened.
  7. Remove from heat and season with salt and pepper.
  8. Roll out one pie crust and place it in a pie dish. Pour in the shrimp mixture.
  9. Cover with the second pie crust, seal the edges, and cut slits in the top to allow steam to escape.
  10. Bake for 25-30 minutes until golden brown.
  11. Allow to cool slightly before serving.

Notes

  • For a spicier version, add more Cajun seasoning or diced jalapeños.
  • Serve with a side salad for a complete meal.
