A delicious and easy recipe for Cajun shrimp pot pie that’s perfect for a comforting meal any day of the week.

- 1 pound shrimp, peeled and deveined
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 cup diced celery
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/4 cup flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 package refrigerated pie crusts
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat, add onion, bell pepper, and celery, and sauté until soft.
- Add garlic and cook for another minute.
- Stir in shrimp and Cajun seasoning, cooking until shrimp is pink.
- Sprinkle flour over the mixture and stir to combine.
- Gradually add chicken broth and heavy cream, stirring constantly until thickened.
- Remove from heat and season with salt and pepper.
- Roll out one pie crust and place it in a pie dish. Pour in the shrimp mixture.
- Cover with the second pie crust, seal the edges, and cut slits in the top to allow steam to escape.
- Bake for 25-30 minutes until golden brown.
- Allow to cool slightly before serving.
Notes
- For a spicier version, add more Cajun seasoning or diced jalapeños.
- Serve with a side salad for a complete meal.
