Description

Bourbon Chicken & Broccoli is a quick and easy weeknight meal that combines tender chicken, vibrant broccoli, and a sweet and savory bourbon sauce.


Ingredients

  • 1 pound chicken thighs, boneless and skinless
  • 2 cups broccoli florets
  • 1/2 cup bourbon
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 2 tablespoons water


Instructions

  1. In a small bowl, combine the bourbon, soy sauce, brown sugar, Dijon mustard, garlic, and ginger.
  2. In a large skillet, heat vegetable oil over medium heat. Add the chicken thighs and cook until browned and cooked through, about 5-7 minutes.
  3. Remove the chicken from the skillet and set aside. In the same skillet, add the broccoli and cook for 3-4 minutes until tender.
  4. Return the chicken to the skillet and pour the bourbon sauce over the top. Stir to combine and cook for an additional 2-3 minutes.
  5. Mix the cornstarch and water in a small bowl, then add it to the skillet to thicken the sauce. Stir until the sauce reaches your desired consistency.
  6. Serve hot over rice or noodles.

Notes

  • For extra flavor, marinate the chicken in the bourbon sauce for a few hours before cooking.
  • Feel free to add more vegetables like bell peppers or snap peas.
