Bourbon Chicken & Broccoli is a quick and easy weeknight meal that combines tender chicken, vibrant broccoli, and a sweet and savory bourbon sauce.

- 1 pound chicken thighs, boneless and skinless
- 2 cups broccoli florets
- 1/2 cup bourbon
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons vegetable oil
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- In a small bowl, combine the bourbon, soy sauce, brown sugar, Dijon mustard, garlic, and ginger.
- In a large skillet, heat vegetable oil over medium heat. Add the chicken thighs and cook until browned and cooked through, about 5-7 minutes.
- Remove the chicken from the skillet and set aside. In the same skillet, add the broccoli and cook for 3-4 minutes until tender.
- Return the chicken to the skillet and pour the bourbon sauce over the top. Stir to combine and cook for an additional 2-3 minutes.
- Mix the cornstarch and water in a small bowl, then add it to the skillet to thicken the sauce. Stir until the sauce reaches your desired consistency.
- Serve hot over rice or noodles.
Notes
- For extra flavor, marinate the chicken in the bourbon sauce for a few hours before cooking.
- Feel free to add more vegetables like bell peppers or snap peas.
