- 1 cup mixed dried fruits
- 1 cup water
- 1 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon mixed spice
- 1/2 cup chopped nuts
- 2 large eggs
Instructions
- In a saucepan, combine the dried fruits, water, and sugar. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Remove from heat and let the mixture cool.
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a separate bowl, mix the flour, baking soda, and mixed spice.
- Once the fruit mixture has cooled, add the eggs and stir well.
- Combine the dry ingredients with the fruit mixture and mix until well combined.
- Fold in the chopped nuts.
- Pour the batter into the prepared cake pan and bake for about 40-45 minutes or until a toothpick comes out clean.
- Let the cake cool before removing from the pan.
