Ingredients

  • 2 cups fresh blueberries
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 package pie crusts
  • 1 egg (for egg wash)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a medium saucepan, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat until the mixture thickens.
  3. Roll out pie crusts and cut into circles.
  4. Place a spoonful of the blueberry mixture in the center of each circle.
  5. Fold the dough over and seal the edges with a fork.
  6. Brush the tops with egg wash.
  7. Bake for 20-25 minutes or until golden brown.
