- 2 cups fresh blueberries
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 package pie crusts
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 400°F (200°C).
- In a medium saucepan, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Cook over medium heat until the mixture thickens.
- Roll out pie crusts and cut into circles.
- Place a spoonful of the blueberry mixture in the center of each circle.
- Fold the dough over and seal the edges with a fork.
- Brush the tops with egg wash.
- Bake for 20-25 minutes or until golden brown.
Notes
- For a sweeter filling, add more sugar to taste.
