- 8 ounces elbow macaroni
- 6 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup chopped romaine lettuce
- 1/2 cup diced red onion
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- Salt to taste
- Pepper to taste
Instructions
- Cook the elbow macaroni according to package instructions; drain and let cool.
- In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In a large bowl, combine the cooled macaroni, turkey bacon, cherry tomatoes, lettuce, and red onion.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta salad and mix until well combined.
- Chill in the refrigerator for at least 30 minutes before serving.
