Ingredients

  • 8 ounces elbow macaroni
  • 6 slices turkey bacon
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped romaine lettuce
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt to taste
  • Pepper to taste


Instructions

  1. Cook the elbow macaroni according to package instructions; drain and let cool.
  2. In a skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  3. In a large bowl, combine the cooled macaroni, turkey bacon, cherry tomatoes, lettuce, and red onion.
  4. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper.
