Description

Ingredients

  • 1 1/2 cups crushed chocolate cookies
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup cherry pie filling
  • 1/2 cup dark chocolate shavings


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed chocolate cookies and melted butter, then press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing well after each addition.
  4. Stir in sour cream until fully combined.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set.
  7. Remove from oven and let cool, then refrigerate for at least 4 hours.
  8. Before serving, top with cherry pie filling and dark chocolate shavings.
