- 1 1/2 cups crushed chocolate cookies
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup cherry pie filling
- 1/2 cup dark chocolate shavings
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine crushed chocolate cookies and melted butter, then press the mixture into the bottom of a springform pan to form the crust.
- In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing well after each addition.
- Stir in sour cream until fully combined.
- Pour the cheesecake batter over the crust in the springform pan.
- Bake for 55-60 minutes or until the center is set.
- Remove from oven and let cool, then refrigerate for at least 4 hours.
- Before serving, top with cherry pie filling and dark chocolate shavings.
