Description

These BBQ Chicken Loaded Potato Skins are a delicious and indulgent appetizer, perfect for game day or a fun party dish.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked shredded chicken
  • 1/2 cup BBQ sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked turkey bacon, crumbled
  • 1/4 cup green onions, sliced
  • 1/4 cup sour cream


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes with water and prick them with a fork.
  3. Bake the potatoes directly on the oven rack for about 45-60 minutes, until tender.
  4. Once baked, remove from the oven and let them cool slightly. Cut each potato in half and scoop out some of the insides.
  5. In a bowl, mix the shredded chicken with BBQ sauce.
  6. Fill each potato skin with the BBQ chicken mixture, then top with shredded cheese and turkey bacon.
  7. Return to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  8. Garnish with green onions and serve with sour cream on the side.
