- 4 medium zucchinis
- 2 cups cherry tomatoes
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the zucchinis in half lengthwise and scoop out some of the flesh.
- In a bowl, mix the cherry tomatoes, olive oil, garlic, oregano, salt, and pepper.
- Stuff the zucchini halves with the tomato mixture.
- Sprinkle Parmesan cheese on top of the stuffed zucchini.
- Bake in the preheated oven for 25-30 minutes, until the zucchinis are tender.
- Garnish with fresh basil before serving.
