- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup shredded cheese
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet, heat olive oil over medium heat and sauté mushrooms until tender.
- Add spinach, garlic powder, onion powder, and salt. Cook until spinach is wilted.
- Lay a tortilla flat and add a portion of the mushroom and spinach mixture, followed by shredded cheese.
- Fold the tortilla in half and place it on a baking sheet.
- Repeat with remaining tortillas.
- Bake in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- Slice and serve warm.

- For added flavor, consider adding jalapeños or other vegetables.
