Description

A quick and flavorful dish that combines cilantro-lime chicken with delicious Mexican street corn, perfect for a weeknight dinner.


Ingredients

  • 4 boneless chicken breasts cilantro-lime marinade
  • 2 cups corn kernels
  • 1 tablespoon mayonnaise
  • 1 tablespoon chili powder
  • 1/2 cup crumbled cotija cheese
  • 1 tablespoon fresh cilantro, chopped
  • 1 lime, juiced


Instructions

  1. Marinate the chicken in cilantro-lime marinade for at least 15 minutes.
  2. Cook the corn in a skillet over medium heat until lightly browned.
  3. Mix in mayonnaise, chili powder, lime juice, and half the cotija cheese.
  4. Grill the marinated chicken for 6-7 minutes on each side or until cooked through.
  5. Serve the chicken with the corn mixture topped with remaining cotija cheese and cilantro.
