- 4 boneless chicken breasts cilantro-lime marinade
- 2 cups corn kernels
- 1 tablespoon mayonnaise
- 1 tablespoon chili powder
- 1/2 cup crumbled cotija cheese
- 1 tablespoon fresh cilantro, chopped
- 1 lime, juiced
Instructions
- Marinate the chicken in cilantro-lime marinade for at least 15 minutes.
- Cook the corn in a skillet over medium heat until lightly browned.
- Mix in mayonnaise, chili powder, lime juice, and half the cotija cheese.
- Grill the marinated chicken for 6-7 minutes on each side or until cooked through.
- Serve the chicken with the corn mixture topped with remaining cotija cheese and cilantro.
