Ingredients

Scale
  • 3 medium zucchinis, sliced
  • 2 cups fresh spinach
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 egg
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ricotta cheese, egg, Italian seasoning, salt, and pepper.
  3. Spread a layer of marinara sauce on the bottom of a baking dish.
  4. Layer three lasagna noodles over the sauce.
  5. Add half of the ricotta mixture, half of the sliced zucchini, half of the spinach, and a layer of mozzarella cheese.
  6. Repeat the layers: noodles, marinara sauce, ricotta mixture, zucchini, spinach, and mozzarella.
  7. Top with the last three noodles, marinara sauce, and remaining mozzarella and parmesan cheese.
  8. Bake for 45 minutes or until bubbly and golden brown.
  9. Let it cool for 10 minutes before serving.
