Ingredients

  • 3 medium zucchinis, sliced
  • 2 cups fresh spinach
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 9 lasagna noodles
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced zucchinis and spinach, cooking until the zucchini is tender.
  3. In a bowl, combine ricotta cheese, oregano, and garlic powder.
  4. Spread a layer of marinara sauce at the bottom of a baking dish.
  5. Layer 3 lasagna noodles over the sauce, then half of the ricotta mixture, half of the zucchini and spinach mixture, and a layer of marinara sauce. Repeat the layers.
  6. Top with the remaining noodles, marinara sauce, and mozzarella cheese. Sprinkle with Parmesan cheese.
  7. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly.
  8. Let it cool for a few minutes before serving.

  • For extra flavor, add fresh herbs like basil or parsley.
  • This lasagna can be assembled a day ahead and baked when ready to serve.
