- 3 medium zucchinis, sliced
- 2 cups fresh spinach
- 2 cups ricotta cheese
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 9 lasagna noodles
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add sliced zucchinis and spinach, cooking until the zucchini is tender.
- In a bowl, combine ricotta cheese, oregano, and garlic powder.
- Spread a layer of marinara sauce at the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, then half of the ricotta mixture, half of the zucchini and spinach mixture, and a layer of marinara sauce. Repeat the layers.
- Top with the remaining noodles, marinara sauce, and mozzarella cheese. Sprinkle with Parmesan cheese.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
- For extra flavor, add fresh herbs like basil or parsley.
- This lasagna can be assembled a day ahead and baked when ready to serve.
