Description

These fresh, no-bake zucchini roll-ups are filled with a creamy herb and garlic cream cheese spread. Perfect for parties, healthy snacking, or low-carb appetizers.


Ingredients

Scale
  • 2–3 medium zucchini
  • 8 oz cream cheese, softened
  • 1 clove garlic, minced
  • 2 tablespoons sour cream or Greek yogurt (optional)
  • 2 tablespoons fresh herbs (parsley, basil, or chives), chopped
  • Salt & pepper to taste
  • Optional: ΒΌ cup sun-dried tomatoes, roasted red peppers, or smoked salmon, finely chopped


Instructions

  1. Wash and trim the zucchini. Slice into long thin strips using a mandoline or vegetable peeler.
  2. In a bowl, combine cream cheese, garlic, herbs, and sour cream or yogurt (if using). Season with salt and pepper.
  3. Fold in optional add-ins like sun-dried tomatoes or roasted peppers.
  4. Spread a thin layer of the mixture onto each zucchini strip.
  5. Roll each strip tightly and place seam-side down on a plate.
  6. Refrigerate for 15–20 minutes before serving. Serve cold or at room temperature.
