- 2–3 medium zucchini
- 8 oz cream cheese, softened
- 1 clove garlic, minced
- 2 tablespoons sour cream or Greek yogurt (optional)
- 2 tablespoons fresh herbs (parsley, basil, or chives), chopped
- Salt & pepper to taste
- Optional: ¼ cup sun-dried tomatoes, roasted red peppers, or smoked salmon, finely chopped
Instructions
- Wash and trim the zucchini. Slice into long thin strips using a mandoline or vegetable peeler.
- In a bowl, combine cream cheese, garlic, herbs, and sour cream or yogurt (if using). Season with salt and pepper.
- Fold in optional add-ins like sun-dried tomatoes or roasted peppers.
- Spread a thin layer of the mixture onto each zucchini strip.
- Roll each strip tightly and place seam-side down on a plate.
- Refrigerate for 15–20 minutes before serving. Serve cold or at room temperature.
