- 2 medium zucchinis, sliced

- 2 cups cooked rice
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, brown the ground beef with onions and garlic over medium heat. Drain excess fat.
- Add zucchini, diced tomatoes, and Italian seasoning to the skillet. Stir well.
- In a baking dish, layer the cooked rice and then the beef and zucchini mixture.
- Top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes until cheese is bubbly and golden.
